‘Baccalà’, dried salt-cured cod, is a kind of food that can easily be stored and carried. In mountain villages where especially in the past it was very difficult to have fresh fish this food is a useful alternative to the usual meat dishes. Because of these characteristics, baccalà has become the main traditional food in Avigliano, where it is cooked in many different ways. At the last weekend in August, in this village, the baccalà Festival is held.

This event passes down a tradition that has become part of the cultural heritage of this area.

During the Festival it is possible to taste baccalà, cooked according to many different recipes, and to watch shows.

Amongst the most popular recipes for cooking baccalà are ‘baccalà a ciauredda’ (in a soup with tomato and fresh onions), baccalà with cruschi peppers, baccalà with olives and so on.
