In Nemoli, the ‘Polenta’ (dish made from maize flour cooked in salted water to accompany various foods or with various dressings) Festival is held. This is a very old tradition that takes place at carnival.
According to a centuries-old recipe, polenta is seasoned with a tomato sauce with sausages, bacon and ground red pepper. Polenta is served with a very good local wine.
The Festival takes place in a carnival atmosphere. Along the streets of the village, traditional carnival masks parade, they are called ‘frazzuogn’, but there are also other ones, drawing inspiration from modern characters. The Festival is enlivened by the music of barrel organs and of ‘tamorra’.
