Horseradish should be planted under ground and should sit there for two or three years.
Only then it would be ready for tasting, grated over your food. It can be oven dried after cutting in slices, but it is much tastier if eaten fresh. It is rich in vitamin C, calcium and potassium.
The juice of its fresh root and its decoction soaked in white wine, are used against anaemia, rheumatism, rickets. Its grated roots give relief to people suffering from sciatica.
In some limited areas of the ‘Parco del Pollino’, on the Basilicata side, red aubergines are grown. In comparison to the common aubergines, these ones are spicier, with a full-bodied taste.
It is more similar to a tomato and therefore in that area it is also called ‘merlingiana a pummdore’.
